Our philosophy

At the Schneeeule Brewery, we want to give Berlin a piece of its culture back: the real Berliner Weisse . Since a large brewery bought all of Berlin's breweries in the mid-1990s, there was no real Berliner Weisse in Berlin until 2012. We're changing that.

By using historical yeasts from the bottles of the last breweries that existed after World War II, we try to get as close as possible to the original. A whiteness fermented in the bottle and has a practically unlimited shelf life.

The maturation in the bottle gives the whites their unmistakable aroma. The longer the beer matures, the finer the aromas and the perlage become. You can try different vintages of our beers in the Schneeeule Salon in Wedding.

In order to pay tribute to the modern craft beer movement, we play with the game. By maturing in wooden barrels and using different aromatics such as ginger, blossoms or chillies, we give the Berliner Weisse a modern twist.
