Rye flour 1150 is a medium to dark rye flour.

Used by Albatross bakery in their rye breads.

Flour grading is different in every country and can be labelled by either protein content or ash content.

In Germany flour is categorised by ash content by 100g.

The higher this number, the higher level of germ, bran, and outer endosperm in the four, and more fiber, minerals and vitamins.

Rye has higher amounts of vitamins B and E than Wheat and less gluten. 

This Rye flour is best used for German style rye breads and for sweet and savoury biscuits or sweets to add a rich earthy malty flavour.

Paulick’s Mühle in Spreewald has been running nonstop for 130 years. 

Dirk Paulick and his son Stephan run the mill as the 5th and 6th generation in the Paulick family business.
