Corbarino is a very precious and rare variety of tomatoes from the Monti Lattari area of Campania. Small and pear-shaped, these tomatoes are jarred whole and preserved naturally in purified sea water, so that they keep their colour vivid, its nutrients intact, thus enhancing its flavor.

Delicate, sweet, and with very low acidity, so they do not stand up to long cooking. They require very little to make an incredible sauce. Cooked quickly with a little olive oil, garlic and basil for a hit of summer. Or straight from the jar on toast with Strakkino and a good lashing of olive oil.
