La Palma y El Tucán is focused on growing both ecologically and economically sustainable coffee farming in their region. They do various innovational things in all sections of farming from growing different varieties to utilizing different processing methods such as Lactic fermenting.
The Neighbors&Crops program is a sustainable Coffee Relationship Model that helps small-scale farmers produce top quality coffee with traditional Colombian varieties, such as Caturra, Castillo, Colombia, Typica, and Bourbon. LPET has identified more than 200 coffee-growing families within a 10 km radius from their own estate. The idea behind the program is to offer their neighbors various benefits that help them to become active parts of the coffee industry.
In lactic fermenting the coffee, cherries are fermented in tanks and by controlling the oxygen, sugar, and PH levels the lactic bacteria that naturally occur in the cherries are activated. After the desired level of fermentation is achieved the coffee cherries are washed with fresh water and left to dry as a whole. Lactic fermented coffees often have yogurt or milk-like softness and texture to them with jammy and sweet fruity notes.
