"Semi-stagionato" means "semi-aged", and though you might find it too soft to grate it properly, the sweet, floral notes of this Pecorino but also its light tanginess will pair wonderfully with a Carbonara :

Young Pecorino has a milder, creamier flavor compared to its aged counterpart. This can add a rich and smooth taste to the Carbonara without overpowering the other ingredients.

Obviously, you can also serve it on your next cheese plate as its 1 to 3 months age shouldn't shock any palate, but befriend every tastebuds it meets. It is young, yes, but already built quite the character and a sweet bouquet.
