Feudo Pollichino have been raising sheep and producing cheeses in the rolling hills of western Sicily's Valle del Belice and for 3 generations. Made exclusively from the organic rich, fragrant milk of the pasture-fed Valle del Belice sheep, this cheese is aged for between 6-10 months and has honey-like aromatics, a spicy savoriness, and earthy, hay-like notes. This cheese can be enjoyed like a Pecorino Romano, in classic dishes such as Carbonara, Cacio e Pepe, or sliced thinly in a salad with pear, rocket, lemon, and a generous drizzle of olive oil.
