Produced over 22 hours according to an old home recipe, Capriflocon’s name already
reveals certain characteristics of the way it is made: cheese flakes - flocon, in French - are made out of fresh goat milk. Their filigree-like structure allows the cheese to mature perfectly over 21 days.
A really delicate, flowing bite feel comes to the fore, with fresh milk and butter
notes, and a slightly nutty finish.
