The inspiration for this bar comes from the flavor-packed but minimal dish Cacio e pepe - the famous Italian pasta dish named after its star ingredients: cheese and black pepper.
The base consists of a 38% white chocolate made with organic, undeoderized cocoa butter from the Dominican Republic, organic whole milk and raw cane sugar. Dehydrated Parmigiano Reggiano DOP cheese adds salty umami flavor, extra virgin olive oil rounds out the sharpness of the cheese, and a few cracks of Cambodian kampot black pepper on each of the bars add another layer of complexity - an assertive but not overbearing punch with eucalyptus notes.
