Known by who has been attentive guest at @terz_berlin brunches this nose-to-tale sausage is artisanally made from the Hühnergarth family farm in Thüringen. Their 60 pigs live in free-range outside all year, they do house-slaughter and really rock at seasoning. In the “Gutsleberwurst” the pig meat and liver are left more coarse to give it a more rustic feel, but the creaminess and umaminess will make this a deluxe supper with a good conscience. Whoever travels through Thüringen should definitely pay them a visit and have a meal in their restaurant.
