"The ingredients are particularly important to us and we attach great importance to high quality. That is why we only use organically certified ingredients and, if possible, regionally produced raw materials directly from the farmers. Our principle is to produce natural, healthy and tasty products. Therefore, we do not use any additives, but ferment naturally and with a long time. Some of our products even mature for several years! None of our ferments are pasteurized, so they are all alive and very healthy.
mimi ferments was founded in 2017 by Markus Shimizu in Berlin. In his shop and fermentation workshop in Berlin, he and his team produce miso, soy sauce, mirin and other selected products that are valued by numerous chefs. In addition, Markus Shimizu regularly teaches the various aspects of fermentation in workshops and, together with his partner Reiko Kanazawa, organizes events that combine food, art and social aspects."
