Process: A pure expression of Clairette, cultivated using biodynamic practices with utmost respect for the soil and environment. No herbicides or chemical products are employed, and the grapes are meticulously hand-harvested. In the cellar, Manuel continues his natural winemaking approach, using indigenous yeasts, minimal oenological additives, and gentle handling of the juice. The wines are aged for 8 to 10 months in tanks, with only a touch of sulfur added before bottling for stability.

Today, he proudly tends to 1.7 hectares of vines in Die, the land of Clairette.
