Process: A pure expression of Clairette, cultivated using biodynamic practices with utmost respect for the soil and environment. No herbicides or chemical products are employed, and the grapes are meticulously hand-harvested. In the cellar, Manuel continues his natural winemaking approach, using indigenous yeasts, minimal oenological additives, and gentle handling of the juice. The wines are aged for 8 to 10 months in tanks, with only a touch of sulfur added before bottling for stability.

With a genuine and friendly personality, Manuel, or "Manu," has been dedicated to crafting exceptional wines since 2016 when he started with just 0.4 hectares of vineyards. Today, he proudly tends to 1.7 hectares of vines in Die, the land of Clairette.
