Instead, the focus is on mechanical soil work, trellising, bud removal, and the application of biodynamic herbal teas, with entirely manual harvesting.
In the cellar, Manuel Pineau continues his natural winemaking philosophy. He employs natural yeasts, avoids oenological additives, and minimizes interventions on the juice, refraining from clarification and using minimal pumping. Only a touch of sulfur is added before bottling to stabilize the wine. Overall, the approach is one of crafting natural wines, with aging in tanks lasting between 8 and 10 months.
