Originally from Turin, Italy, the Ruffatti family moved to El Salvador and began a life planting and producing coffee. Their farm, Finca El Salvador (FES) has now been in the family for five generations.

Rodolfo Ruffatti Batlle is a producer and exporter of high quality El Salvadorian coffees, sharing coffees from farms belonging to both his family and other producers throughout the Santa Ana/Apaneca region. This is one of several lots we purchased from Rodolfo this year, selected for its quality sweetness and potential versatilty to be released as an omni-roasted coffee. 

FINCA EL SALVADOR

Finca El Salvador is located in Cerro El Aguila, which lies in Santa Ana, in the Apaneca -Ilamatepec Mountain Range in the north-east of El Salvador. Having placed 10th in the Cup of Excellence (CoE) auction program in 2015, the farm has gained a reputation for producing clean, sweet and versatile coffees that demonstrate the potential of one of Central America's most underestimated coffee producing countries. 

PROCESSING 

This washed Red Bourbon lot was grown at an altitude between 1500 and 1640 metres above sea level. This altitude was previously unsuitable for planting the Bourbon variety due to the cold weather; however due to increasing annual temperatures (a result of climate change), it is now possible for farms such as Finca El Salvador to start planting and harvesting coffee at higher altitudes.
