🐄 Backensholzer Hof | Friesisch Blue Cheese ±200g
It is a semi-hard cheese, after a pressing into forms, the cheese is injected with blue culture and smeared with red culture on the rind, typical of the regions cheeses. The cheese is then aged for 10-12 weeks before being delivered to us where we packaged immediately after slicing, preserving it's quality and enabling you to enjoy it at it's best. The cheese is somewhere in between a stilton and a roqueforte, with remarkably well balanced blue cheese savouriness combined with a wonderful sweet creaminess. An amazing cheese best enjoyed at room temperature, pairs well with danish style rye breads, fresh fruits and jams.
🐄 Castelmagno di Montagna DOP ±200g
A distinguished Piedmontese cheese, known for its protected designation of origin (DOP) status. Produced from raw cow's milk, this cheese is made between October and June, using milk from cattle fed on hay and aged for at least 6 months. It features an ivory-colored, grainy paste that melts pleasantly in the mouth. As it ages, it develops a creamy under-rind and sometimes natural blue veins. Its flavor is savory, with animal notes and a strong under-rind, while the internal part predominantly tastes of hay.
Castelmagno is unique as it falls under the category of spontaneous blue cheeses, meaning its mold develops naturally without inductions, unlike other blue cheeses where Penicillium Roqueforti is added. The imperfect manual pressing and the humid curing environment encourage the development of Castelmagno's characteristic marbling. This cheese is aged by La Meiro, a family business dedicated to producing and aging Castelmagno DOP. It's perfect for first courses, particularly gnocchi and risotto, and pairs well with honey or fruit compotes
🐄 Backensholzer Hof | Deichkäse ALT | 12 Month ±200g
The little sibling of the Deichkäse Edel you know and love, the Deichkäse Alt is ripened for a minimum of 12 months, with mite ripening later on, and is cared for with white wine and a special rind solution so that it develops its typical aroma. Like all Backenholzer cheeses, the Deichkäse has an edible natural rind.
Sweet, nutty, mild flavoured and perfectly balanced. The texture is wonderfully creamy and melts in the mouth. Enjoy as is on any cheese plate and a definitive favourite for all taste buds, or baked or broken into salads. Very very good cheese.
🐄 Latteria Moro | Sottocenere al Tartufo ±200g
A culinary masterpiece crafted by the skilled hands of Sergio Moro at Moro Latteria di Moro Sergio in Oderzo, nestled in the picturesque province of Treviso, Veneto in northern Italy.
Sergio Moro employs a meticulous process that involves two distinct milkings, rich morning and evening milk, to create this cheese. The addition of a generous amount of black truffles to the cheese's paste sets the stage for a truly unique flavor profile.
Aged for a patient 4-5 months, the cheese emerges from its resting place in oak ashes, where it undergoes a transformation enriched with a harmonious blend of nutmeg, cloves, coriander, cinnamon, licorice, anise, fennel, and the unmistakable aroma of truffle, a nod to the enduring traditions of Venetian farmers.
Handcrafted with precision and care, each 12 lb. form of this cheese is a work of art. The dedication to detail is evident in every cut and wrap, showcasing the commitment to delivering a product of unparalleled quality. The result is a smooth, silky, and irresistible.
