INGREDIENTS (Serves 2 - 3)
• 2 cans of cannellini beans (rinsed and drained)
• 250g-300g cherry tomatoes (halved or quartered)
• 3 garlic cloves, minced (or more if desired)
• 1 bunch of parsley, finely chopped (keep some whole leaves for garnish)
• 2-3 chili peppers (based on your taste), thinly sliced
• Grated or shaved Parmigiano Reggiano
• Crushed black peppercorns (toasted, if possible)
• Extra virgin olive oil
• Optional: Splash of vegetable broth or water for sauce consistency
• Optional garnish: Lemon juice for added freshness
INSTRUCTIONS
1. Preparation:
• Rinse the beans and set them aside.
• Halve or quarter the cherry tomatoes.
• Thinly chop garlic, chili peppers, and parsley. Keep some parsley leaves aside for garnish.
2. Cooking the Base:
• Preheat a large pan and drizzle in olive oil.
• Add the garlic to the hot oil and sauté for less than a minute until fragrant (don’t fry or brown it).
• Toss in the cherry tomatoes. Stir occasionally and cook until they release their juices.
3. Combining Ingredients:
• Add the rinsed cannellini beans and chopped parsley to the pan with the tomatoes.
• Season with salt and stir to coat everything in the flavorful base.
4. Optional Sauce:
• For a creamy texture, add a splash of vegetable broth or water (around ½ cup). Cover the pan and let simmer on medium heat for a few minutes. Stir occasionally.
5. Finishing Touches:
• Once the consistency is to your liking, uncover and adjust the seasoning with salt and black pepper.
• Garnish with shaved Parmigiano, fresh parsley, and a drizzle of olive oil. For extra brightness, add a squeeze of lemon juice.
