I Sapori di Corbara is a distinguished Italian company nestled in the heart of Corbara, near the Amalfi Coast. Founded with a passion for preserving regional agricultural traditions, they specialize in cultivating and processing the unique Corbarino tomato. The Corbarino tomato, native to the Monti Lattari slopes, thrives in the fertile volcanic soils enriched by the nearby Vesuvius volcano. This terroir imparts a distinctive sweetness and low acidity to the tomatoes, characteristics that are further enhanced by traditional dry farming techniques without irrigation.
The Corbarino tomato is grown in the open air without being artificially irrigated, it only takes rainwater (when there is any), and where the harvest takes place in just two months a year. It is a very resistant plant, which grows on volcanic soils (lapilli or lava stone) and therefore rich in mineral salts precious for nutrition.
The result is a small, pear-shaped tomato with an intense red hue, celebrated for its rich flavor and versatility in culinary applications.

This method maintains the fresh taste and firm texture, making them ideal for enhancing pasta dishes, pizzas, and gourmet sauces. Our way of working faithfully reflects the traditional way of preserving products, typical of our People. The growers who supply us must respect our quality specifications; after carefully selecting all the cherry tomatoes that arrive at the company, we check the shape, size, degree of ripeness, consistency, color, pH and sugar content, to then decide the most appropriate use for our references. The selection work is exclusively done by hand, and the pasteurization phase is carried out at 98/100 degrees because this phase is fundamental for the integral conservation of all the organoleptic characteristics. In fact, at these temperatures all the protein properties remain intact in the cherry tomatoes: lycopene and beta-carotene, which together represent a great defense in the prevention of tumors and pectin, which allows the Corbarino to bind wonderfully to the dough and makes it excellent in the preparation of pizza.
