The Baruther Urstromthaler is the incredibly creamy brother of the well-known Mulberry. The rich jersey milk gives this soft cheese its high fat content- all we want in our lives! A week after production the rind is washed several times so it gets an aromatic smear-rind. Afterwards the cheese is ageing for some weeks more until a fine layer of yeasts cover the red rind. During ageing the center becomes soft and starts running already at room temperature. The taste reminds of rich butter and fine red smear cheeses.
