Amal brought a ray of sunshine with her solar presence and her Tunisian recipe, we truly had the best time.
Her Tunisian sandwich bursts with flavor, nutrients, and love: a real casse-croûte made for long workdays, or simply for any gourmet in search of a delicious, heartfelt snack.
Amal founded Harissa & Co a few years ago, driven by pure passion and love for her Tunisian heritage. Balancing her work as an electrical engineer, motherhood, and the many challenges of becoming both a business owner and producer was far from easy.
One of her biggest challenge was importing the key ingredient for her recipe the Baklouti chili. But what began as a struggle turned into something deeply meaningful: today, her harissa is produced directly in Tunisia using traditional artisanal methods, in partnership with a local chili producer who employs many women from underprivileged regions, often the sole providers for their families.
A wholesome recipe full of history, tucked into an Albatross Bakery sourdough baguette, what more could you want?

INGREDIENTS
For 1/2 a baguette / 1 or 2 persons
Sandwich base:
- ½ Baguette (preferably Albatross Bakery sourdough)
- 1 potato
- ½ can of tuna (≈100 g)
- A handful of olives
- A few capers (well rinsed if preserved in salt!)
Salad:
- 1 tomato (finely chopped in tiny cubes)
- ¼ cucumber (finely chopped in tiny cubes)
- ¼ red onion (finely chopped in tiny cubes)
- 1 tbsp olive oil
- Salt & pepper
Carrot purée (Ommek Houria):
- 1 boiled carrot, mashed or pureed
- A pinch of cumin
- Olive oil
- Salt
STEPS
1. Prepare the carrot purée (Ommek Houria) & the potato
Cut the carrots and potato in pieces and boil them until soft.
Separate the potato and the carrots pieces.
Mash or blend the boiled carrot until smooth.
Add olive oil, a pinch of cumin, and salt to taste.
Mix well and set aside.
2. Make the salad
Combine the finely chopped tomato, cucumber, and red onion in a bowl. Season with olive oil, salt, and pepper, and mix gently.
3. Prepare the Harissa spread
Mix a spoon of harissa with a spoon of water and a spoon of olive oil.
4. Assemble the sandwich
Slice the baguette in half lengthwise. Spread a layer harissa spread followed by a layer of carrot purée on one side. Add the cubed potatoes, tuna, olives, and capers. Top with a generous spoonful of the fresh salad.
5. Finishing touch
Press the sandwich lightly to let the flavors meld together. Enjoy as a nourishing lunch or an energizing snack, and if you’re like us, don’t hesitate to add more harissa! 🌶️ ❤️
